In plants there are chemicals that are important in addition to vitamins and minerals and these are known as phytochemicals or phytonutrients. Phytonutrients are responsible for a plant's unique characteristics including color, flavor, and smell. Phytochemicals protect plants against sunlight and oxidation, and they are antioxidants. While Vitamin C, Vitamin E, and beta carotene are probably the most well known phytonutrients, there are hundreds of different phytonutrients in a given fruit or vegetable. Carotenoids include alpha and beta carotene, lycopene, lutein, and zeaxanthin.
